Kids are back to school and you’re getting back to your routine of making lunches and snacks on a daily basis. Figuring out what snacks to pack in their lunch box while keeping it healthy can be tricky. Dr. Beatty shares an eye healthy recipe that is nutritious and tasty enough for even the pickiest eaters.

Rich in Vitamin A and C, these apple sandwiches are not only delicious, but can improve issues associated with poor eyesight due to their generous nutrient content. Don’t forget to subscribe to our YouTube channel where you can watch additional episodes of Not Just Carrots!

APPLE SANDWICHES:

Serving size: 4
Ingredients:

  • 1 large apple
  • Peanut butter
  • Granola
  • Mini chocolate chips or raisins, nuts, coconut, cinnamon, etc.

Directions:

  1. Wash and cut apple into 4 slices.
  2. Core the apple with an apple corer or a small cookie cutter will work. {You could cut fun shapes like stars and hearts.}
  3. Spread peanut butter on one slice.
  4. Sprinkle with granola and chocolate chips.
  5. Top with another slice of apple.
  6. Note: If you want to pack these in a lunch box, brush each apple slice with lemon juice to keep it from turning brown.
