A sweet treat to end your meal is perfect and a sundae topped with fruit is something everyone loves! Dr. Artis Beatty and Dr. Amanda Steele serve up the perfect grilling sundae to help overcome your ‘end of summer blues.’
Pineapple is a rich source of vitamin C, beta carotene, anti-oxidants and minerals like manganese and potassium. Not only is this pineapple sundae delicious, but the many eye healthy vitamins help fight against cell damage and reduces the risk of macular degeneration. PINEAPPLE SUNDAE:
Serving size: 4
Ingredients:
- 4 pineapple slices
- 4 scoops vanilla ice cream
- caramel or dulce de leche, for drizzling
- 2 tbsp. sweetened shredded coconut, toasted
Directions:
- Heat grill to high.
- Grill pineapple until charred, 1 minute per side.
- Core the apple with an apple corer or a small cookie cutter will work. {You could cut fun shapes like stars and hearts.}
- Top each pineapple slice with vanilla ice cream and drizzle with caramel or dulce de leche. Top with shredded coconut and serve immediately.
